Meal Prepped High-Protein Crustless PB&Js
Time: 20 Minutes of Prep and 1 hour for Freezing
Ingredients
- 12–16 slices soft sandwich bread (white, wheat, or brioche)
- 1 jar Blueberry BamJam
- 1/2–1 cup peanut butter (or almond butter / sunflower butter)
- Optional: sliced bananas, strawberries, or honey drizzle
- Optional: pinch of salt for balance
Steps
- Lay out 12–16 slices of soft sandwich bread and gently flatten each slice with your hand or a rolling pin to help create a sealed, “Uncrustable-style” texture.
- Cut the bread into matching squares using a square cookie cutter or a knife so you have evenly sized tops and bottoms.
- On half of the bread squares, spread a thin layer of peanut butter (or nut/seed butter of choice), making sure to go close to the edges to help create a seal.
- Add 1–2 teaspoons of BamJam Blueberry spread on top of the peanut butter, keeping the filling centered and leaving a clean border around the edges.
- Place a second bread square on top of each filled piece and press down firmly to close.
- Seal the edges by crimping with a fork all the way around, or use a sandwich press/crimper.
- Optional: lightly trim and press again if any filling escapes to ensure a tight seal.
- Place assembled sandwiches on a tray and freeze for 1–2 hours until solid, then transfer to a freezer bag for storage.
- To eat, let thaw at room temperature for 20–30 minutes, or pack frozen in a lunchbox where it will be perfectly thawed by lunchtime.
